The oven is arguably the most important piece of equipment in a commercial kitchen, so it’s important to consider your needs and choose wisely. Convection ovens, which use a fan to circulate hot air around food, are the most popular for baking and roasting because they provide faster, more consistent heating without hot or cold spots.


Despite the popularity of convection cooking, there are some things that don’t bake well with air circulation. Cake batters can be splattered around the oven or develop ripples, while light pastries may be pushed around the baking sheet by the moving air. To overcome this problem, look for models with a variable-speed fan or an oven that lets you shut the fan off during baking.
